Frying oil misuse

Ta’ameya or the Egyptian falafel is to die for street food for breakfast and usually paired with fool( Egyptians mashed beans). It is mainly made of fava beans, red onion, parsley, cilantro, dill, garlic, coriander, salt, and cumin crushed together, shaped into balls and fried in hot oil. It is pretty nutrient but the problem is the frequency of changing the frying oil by street vendors, specially it is huge amount of oil and I won’t expect that they usually it frequently as it wont be cost effective. I googled the risk factor of  reusing the oil and it would  increase free radicals in the body, which can cause inflammation – the root cause of most diseases including obesity, heart disease and diabetes. High inflammation in the body can also reduce immunity and make you prone to infections. I hope there is more control and inspection on the street vendors and places that use frying oil,
